How nice is it when the kid’s come down and want to make something for dessert! The good thing about my Children is, it is always dessert and when they get onto something good we could have it all the time.
This was very easy as I did have the crème Patissiere already made but even if you have to make it up it is still very easy, you could even make double the crème Patissiere and then have it with fruit the next night.
The great thing about this dessert is you can use any fruit, the kids used berries as that is what I had change it to what your kids like or what you have in the fridge.
- 5 Glass martini glasses, or something similar, using as many as in your family
- 1 pkt jelly any colour, red is nice with the berries
- 5 Sponge finger Biscuits
- 1/2 punnet strawberries
- 1/2 punnet Blackberries plus 5 more to decorate
- 500ml Milk
- Vanilla essence or 1/2 Vanilla bean
- 4 egg yolks
- 130gm Sugar
- 60gm flour
Make the jelly up using packet instructions
Now how to assemble this masterpiece
Using the Martine glasses divide out the blackberries into glasses, (cut in half if they are too big). Cut strawberries in quarters and place evenly in glasses, spoon over some jelly so that it covers the fruit. Cut the sponge finger biscuits into 1cm cubes and then place a layer on top of the berries and cover with the jelly.
Place the glasses into the fridge and allow the jelly to set whilst you make the Crème Patissiere.
Place the egg yolks, sugar and flour into a bowl and cream together until pale. You can do this in a Kenwood mixer or kitchen aid if you like
Place the milk on the stove in a heavy base saucepan and bring to the boil, just as it comes to the boil take off the heat and slowly whisk into the egg yolk mix. Return the mix back to the sauce pan and allow the mix to come back to the boil and cook for 2 minutes.
Put the Crème Patissiere into a clean bowl and cover with glad wrap (this stops a skin forming on top) and allow it to cool for a little while.
Leave for 30 minutes and pipe on top of the jelly. it may still be a little warm but it should pipe nicely, if you do not have a piping bag just spread out evenly onto the jelly. Decorate with the 5 extra Blackberries. you may have a little Crème Patissiere left use as custard for dessert another night or as a snack when the kids get home from school.
Place into the fridge and allow to cool until ready to serve. If you are leaving for several hours you may like to cover with glade wrap.
